So I started getting this produce delivery service, and I have SO MUCH produce left over from last week that I'm not sure I'll be able to use everything! I'm currently making a pot of, uh, something that doesn't have a name. I'm not sure how it will even turn out, but it's use it now or toss it out, so I might as well throw it all together and go from there.

I also have green beans, rainbow chard, Italian red peppers (they look like oversized chili peppers, but they're bright red like a bell pepper, and they taste like a milder red bell pepper), a cucumber, and carrots that need to be used. I'm making the Budget Bytes one-pot roasted red pepper pasta later, and I'll probably add the Italian peppers to the pot because it seems like I might as well. Green beans will get the basil-and-garlic treatment, the chard and carrots will go into the whatever-you-want-to-call-the-stuff-simmering-on-the-stove later, and the cucumber will go to a coworker. Oh! And apples. I have some I don't like (my favorites are Honeycrisp, Pink Lady, and Granny Smith, and these are mealy and not-tart), so I'll go start those simmering for applesauce now. I think that will take care of the produce for this week. I'll still have some potatoes left over, but I can toss those in the oven with some olive oil and salt and roast them up. Or just save them for next weekend since it looks like I'm not getting any potatoes in the next delivery.
(The next delivery is supposed to have pears, nectarines, and strawberries! SO EXCITED! I'm hoping they swap the scheduled eggplant out with something else. And send Roma tomatoes instead of beefsteak or whatever they sent this last week.)
