You could make a batch of shredded chicken taco filling (chicken, a pack of taco seasoning OR your favorite homemade blend, a jar of salsa, cooked and then shredded) and assemble other things of choice (beans, rice/grain if you want, lettuce, tomato, guac, cheese, etc) and have burrito bowls you can put everything together except the cold toppings/veggies/sour cream and then just add those before eating. (You could also do beef or veggie burrito bowls, for that matter).
I like things like that because you can change up the ingredients each day to avoid getting bored, and just use the same base things (meat, rice, whatever). You could also do the same thing with meat and do taco salads.
When it's cold, I like to make a huge pot of veggie soup (usually with beef) and just eat that until it's gone.
And mason jar salads can be a lifesaver. You can pack them all up on the same day but load them with different ingredients to avoid boredom.
