That whole 90+ degree hell stretch then those WTF100+ degree days rendered my cooking enthusiasm to "oh look, a microwave, what can be reheated in there in under 2 minutes?" level of cooking.
After seeing the weather report for the rest of the week, I've been thinking about making more biscuits to go with the apple pumpkin butter we picked up at the farmers market.
As to healthy lunches, I've been trying (key word here, see aforementioned heat complaint) to get into the habit of making twice as much at dinnertime so we have lunches for the next day. Having said that, cooking up a crockpot full of chili or a pot of curry usually results in healthy-ish meals for a couple of days.
